This featured on This Morning. And it went down a treat!

The mash was so tasty that we’re trying to think of what else we could pair it with. I think this is a prime example of healthy cooking being exciting and tasty. The fish was cooked to perfection, with the skin being lovely and crisp. It even looked great on the plate. And using the mint with something other than lamb was really refreshing.

To top it off, it was quick and easy to prepare. It’s one we’re going to keep in the bag for shopping nights when we don’t have so much time left in the evening.

And apparently it is full of vitamin B12, so we can make healthy red blood cells!
