Not going to lie… this is not up there with my favourites – but it’s a flavour preference.
If you like Thai food and flavours this is something you will enjoy. And easy to make if you own a food processor. Although this is a Jamie Oliver recipe from his new book, I can only find this similar recipe on his website.
So it was far easier to pop a photo in rather than explain the differences between the recipes! The only downside to the one we made was that it was quite difficult to double up and required separating into two dishes. It was really flavoursome and reminded me of a thai green curry- but that’s something I don’t really like! On the plus side squash it full of vitamin A which not only helps us see in the dark, but helps to metabolise iron properly – and we roasted the left over to have as a snack!
