This is quick… if you stick to the recipe and don’t make roast potatoes. But they’re so worth it!
Can’t find this Jamie Oliver recipe online, it’s from his new book ‘Everyday Super Food’. This one made the grade as it’s packed with vitamin C.
We’re not huge fans of broad beans so we just did extra peas! And I may have forgotten the feta… but it was still all very tasty. Perhaps the mint sauce was a bit strong (too much vinegar) so if you have to double it up for four people (like us) only add 3 tablespoons!
Definitely think the roasties were a great addition… although it slightly takes away from how healthy it originally was!
